Price - не обязательно и идиоту ясно!!! Usually, "price" - use for unit (right now we are talking about knife, so - price for one knife, and "total" mean - all charges: all knives, freight charges, insurance, handling fees and etc)
knifes and knives - both correct!!!In grammer - yes , correct - knives, but every day language you can use - knifes.
About payment - this is totally wrong - because nobody ask like this.
If you want to ask like this, right to say is: "What type of payment do you accept?
